- Jam Sugar 500 g
- Kosher Salt 2 pinch
- Frozen Cherries (pitted, thawed) 1500 g
- Lemon Juice 2 tbsp

- Large mixing bowl
- Potato masher
- Rubber Spatula
Cooking Steps Prep Cooking
Prepare the Cherries
With a potato masher or your hands, squeeze and smash the cherries enough to release some juices and break down the cherries into large chunks. If using fresh cherries, make sure to rest them overnight to ensure the juices are released.

Prepare the Probe
Insert the probe to the clip attached to the side of the pot making it doesn't touch the bottom.
1. Connect the Cookware
Turn the burner on and place the cookware on it. Tap the cookware twice until the symbol apears on the cooktop. Select Boiling/Cooking with Water and set the temperature to 104°C.
2. Add and Cook the Jam
Stir frequently as the jam cooks and reaches the set temperature of 104°C.

3. Add the Lemon Juice
Turn the burner off, the and the lemon juice and stir to combine.

4. Transfer and Preserve the Jam
Enjoy this jam fresh, then keep it for longer by adding it to a vacuum bag once it has cooled completely. Add to a vacuum bag and seal on Vacuum Level 2/ Seal Level 2. Enjoy over toast or as a filling for cakes and tarts.
