For the Potatoes
- Water as needed
- Russet Potatoes 1400 g
- Kosher Salt as needed
- High Heat Oil (grapeseed, vegetable, canola) 1500 ml

- 5qt (5L) Pot
- Cooling Rack

- Large mixing bowl
- Lint-Free Towel
- Paper Towel (as needed)

- Tray or Large Plate
- Vegetable Peeler
Cooking Steps Prep Cooking
Prepare the Probe
Insert the probe into the clip attached to the side of the pot making sure the tip is not touching the bottom.
Measure and Add the Oil
High Heat Oil (grapeseed, vegetable, canola) | 1500 ml |
1. Connect the Cookware
Turn the burner on and place the cookware on it. Tap the cookware twice until the symbol apears on the cooktop. Select Heating up and Frying and set the temperature to 135°C.
2. Prep the Potatoes
Peel the potatoes and cut into batons of 1/4" (5-7mm). Add to a bowl of lukewarm water and set aside.

3. Remove and Dry the Potatoes
Now that the oil has reached target temperature remove the potatoes from the water and add to a clean lint-free towel. Dry well and set aside.
4. Add and Fry- Blanch the Potatoes
Add the potatoes into the preheated oil and par-cook them for 5 mins or until the potatoes start to look translucid or archieve no color. Stir occasionally.

5. Remove the Potatoes
Remove the french fries onto a paper towel lined plate. Continue cooking any remaining potatoes until they are all par-cooked.
6. Increase the Temperature of the Oil
Set the temperature to 176°C and wait until the temperature is reached.
7. Add and Fry the Potatoes
Now that the oil is up to temperature. Add some of the potatoes to the oil and cook for 5 minutes or until golden brown. Stir occasionally.

8. Remove the Fries
Transfer the fries to a plate lined with paper towels and place them into a low oven to keep warm while you continue frying more potatoes. Fry any remaining potatoes. Turn the burner off when done frying.
9. Serve and Enjoy
Sprinkle the potatoes with salt and serve with your favorite dipping sauce.
